Shortcrust Pastry So Flaky It Is Almost Puff

If you haven't heard of Paul Hollywood, it won't be long before you do. The 47-year old Hollywood started working as a baker in his father's bakery as a teenager. Baking and teaching others to bake has been his life ever since. I first came across him watching The Great British Bakeoff, but he has since expanded his horizons and is appearing as a judge on The American Baking Competition 2013 (CBS). I liked Paul Hollywood's Bread so much that I acquired a copy of How to Bake and am I ever glad that I did! Let me tell you about a few of my favorite recipes from the book.

Hollywood's passion is bread baking (he is said to bake the most expensive loaf of artisan bread in Britain, an almond and roquefort sourdough) and that comes shining through in How to Bake, with about 2/3 of the book devoted to bread in various guises, with chapters on Basic Breads, Flavored Breads, Sourdough, and Croissants, Danish & Brioche. Hollywood spent some time living & working in Cyprus and you'll see that experience reflected in a number of the breads featured in the book. I've made several of his recipes (his Ciabatta from Paul Hollywood's Bread is stunning and an unusual shaping technique makes it dead-easy) so I chose something a bit different for a test recipe.

▶︎ TEST RECIPE - PUMPKIN SEED STICKS WITH POPPY SEEDS

This is an easy recipe that utilizes bread flour, whole wheat bread flour and malted bread flour chock-full of pumpkin seeds. (If you can't find malted bread flour you could use a 7 or 12 grain flour.) The dough is divided into 10 portions, then each portion is rolled out into a stick about a foot long, brushed with water and then sprinkled with a generous amount of poppy seeds. The sticks are scrumptious with a rich, nutty flavor - excellent with cheese or the Carlton Pate that I recently made from Mary Berry's Christmas Collection.

This recipe could easily be baked as a single loaf, formed into dinner rolls instead of the sticks, or cut into 20 portions instead of 10 for a thinner, less filling nosh. I cut a couple of sticks on the bias, brushed them with a tiny dab of good olive oil and baked them at 250 to make small toasts or crackers to serve with cheese or that pate.

Where most baking books spend a lot of time on cakes and cookies, Hollywood combines Biscuits, Puddings & Cakes all into one chapter. Remember that in the UK biscuits are cookies and puddings can be any dessert. Look in this chapter for stunning recipe for traditional Shortbread that he says will keep 3-4 days (not in my house!), cheesecake, muffins, clafoutis and more. I was sorely torn between a flour-less Chocolate Almond Cake covered in Chocolate Ganache that uses ground almonds to provide a "cake" texture and a lemon cake. Lemon won.

▶︎ TEST RECIPE - MRS. POST'S LEMON DRIZZLE CAKE

A variation on Orange Marmalade Cake, this makes a small loaf that is flavored with lemon curd, then soaked with a mixture of lemon juice, lemon zest and granulated sugar while hot from the oven. One bowl, no mixer required. Lovely with a cup of tea, the cake is moist, very light textured and keeps for several days. It quite reminds me of my mother's favorite lemon cake - without the cake mix.

● One note - when making this or Orange Marmalade Cake (recipe not included in this book) do not "eyeball" the amount of marmalade or curd called for. Too much will throw off the chemistry of the cake and you'll end up with an ugly, though edible, dip in the middle of the loaf.

The final chapter in How to Bake is Tarts & Pies, which also includes Puff Paste. It is this chapter that thoroughly made the book for me. Our British cousins are much more prone to savory pies than we are here in the US and it is here that Hollywood's non-bread baking really shines. Having discovered Chicken & Mango Chutney Pasties inspired by the flavors of the British Raj in The Great British Bake Off: How to Bake: The Perfect Victoria Sponge and Other Baking Secrets, Hollywood's recipe for larger but similar Moroccan Pasties caught my eye straight off.

▶︎ TEST RECIPE - MOROCCAN PASTIES

Shortcrust pastry colored bright yellow with turmeric is cut into 7" circles, then filled with raw ground lamb and a mixture of potato or sweet potato, red onion and chopped fresh cilantro (coriander) flavored with cinnamon and spiced with a pinch of chile flakes. I used sweet potato since that was what I happened to have handy. Hollywood's Shortcrust Pastry recipe is a bit different than you see on this side of the pond. I make a mean pastry thanks to my Grandma - light and flaky. Hollywood's recipe is, however, not just a really good pie dough. It is exceptional, the flakiest I've ever come across this side of puff pastry.

Grandma's $0.02 - If you acquire How to Bake for the shortcrust pastry alone, it is worth every penny! My copy came from the UK and is in metrics. Other books by Paul Hollywood that I've purchased here at Amazon have not been "translated" so you'll need a digital scale. You'll find volume measurements on the side of your pyrex measuring pitcher. Teaspoons and tablespoons are the same.

Absolutely in love with this book

I bought this book because I am obsessed with Great British Bake Off and the judges Paul Hollywood and Mary Berry. They are thorough in their recipes and everything I have ever made from them was perfect. This book is no exception...add it to your baking Bibles! The first thing I made was the Bloomer bread. Let me just say that I will now be baking bread as much as possible because store bought is no comparison. The taste, the texture and the smell were just heavenly! I also made the wholemeal bread - to die for! If you are serious about baking and need good basic recipes this should be your starting point. You will not regret it.

If you really want to understand the possibilities of passive surveillance, just get this now. I passively also learned more about hacking than pretty much any other book. The style of writing is great for a technical book, starting with low level techniques and slowly building in information, humor, and prose toward some pretty creative ideas about the nature of passive computing.

Zalewski deals in the minutia

Silence on the Wire is not your typical security book detailing the
latest application exploits or generalized security trends and attack
prevention. Zalewski deals in the minutia. If you were to construct
a Bell Curve of security knowledge and concepts, you would need to
chop out a large portion of this graph and simply include the upper
threshold, in which Zalewski thrives on the seemingly unknown.

Zalewski takes a bottom-up approach. He dives right into the security
of hardware design, Random Number Generation, and how this can all add
up to information leakages otherwise known as security threats. If
you have ever typed on a keyboard, then you may be interested in
knowing what signature you are generating of yourself every time you
log into that remote SSH console. Perhaps you might also be
interested in the fact that simple mathematical operations, such as 2
* 100, could result in timing attacks against your algorithm, whereas
100 * 2 may not. Scary stuff.

Zalewski continues with seemingly innocuous attacks that can occur
before your IP packets ever leave the local network. It is unnerving
to find out just how easy (and cheap) it is to reconstruct data from
those blinking lights on your network equipment, or unsanitary
Ethernet frames. Have you ever given thought to how nice it was to
have virtual network auto-configuration on your switches? Well, so do
your foes.

Once your packets touch other nodes all across the Internet, that's
when the real fun begins. If you are already familiar with the OSI
Model and the TCP/IP suite, then your reading will hit a low point for
the next thirty pages or so. However, when you emerge from this sand
trap of common knowledge, most certainly provided to assist uninformed
readers, you are met with quite worthy knowledge detailing the ability
to accurately identify remote parties, who otherwise may wish to
remain anonymous. Your choice of Operating System and Web Browser may
help somewhat, but Zalewski shows how you can still be sniffed out

Zalewski's final chapter in the book leaves us with the lesson that
sometimes all you need to do to discover the minutia, is to open your
eyes.

The best (most unique, most interesting) security book I've read, period.

I have an extensive library of computer security books, and this is by far the most interesting, most novel, most entertaining computer security book I own. I am actually going through each of the footnotes, reading every paper mentioned in the book. This books is not a textbook for system cracking or defending your system, like O'Reilly's Practical Unix and Internet Security (my second favorite security book). Instead Zalewski has gone somewhere entirely new, showing how your computer leaks information to other parties without 99.999% of the population realizing it. I do network security for a living, am a privacy fanatic, and figured I'd learn a few new things. I was overwhelmed by the amount of new information I learned. Reading this book was a humbling yet exhilirating experience. Some of the sections are written so clearly a lay person could understand them, but other sections assume a great deal of knowledge of computer lore, particularly TCP/IP networking. Buy this book, then run silent, run deep.

Great book for learning the basics

This book really helped me understand the basics of my prose writing. It makes me think not only about the pieces that I write but also about the issues of plot and character etc. and how to get a handle on them and resolve them. Lot's of ideas on how to organize a piece and how to get started too. Strong recommendation.

A Tale of Two Indigenous Visions

The book draws surprising connections between the ancient Hebrew social concept of Shalolm with what Woodley calls the "Harmony Way" which, he argues, is embedded throughout the stories and ceremonies of North American First Nations traditions. He adeptly and respectfully suggests that modern, western society (and perhaps more importantly, Christianity and Christian theology) has become disaterously unmoored from its roots and that perhaps, the best of indigeonous vision can help broker a recovery of what has been lost, and restore us to a measure of sanity.

Dr. Randy Woodley is a Keetoowaw Cherokee, a distinguished associate professor of faith and culture at George Fox Seminary, and a fellow pilgrim of the Jesus Way from within the indigenous culture and tradition of his people.

p 51: The artificial reality created by modernity places us in a world where human achievement (not God's creation) is heralded as the pinnacle of beauty, wisdom and inspiration.

p 79: Any system (cultural/economic institution,) starting out fairly good can become corrupted over time. Primal peoples understand this concept, and in order to maintain harmony they embed renewal and cleansing ceremonies in their systems, whereas modern peoples have neglected to include such systems.

p. 127: Looking at the problem from a global perspective, the normal energy supplied by Mother Earth through producers such as phytoplankton are being consumed too rapidly and disequilibrium has occured. Under normative conditions (pre-modern), humans are only tertiary consumers of the earth's energy, behind more primary consumers like zooplankton and secondary consumers like fish. Humans have moved recently from tertiary consummers to becoming primary consumers. Such change is beyond the earth's natural cycle and recharge rates, creating imbalance and disharmony on the whole planet. In order to restore balance, the earth is being forced to "consume" the primary consumer, moving her temporarily to confront humanity with the only defense she has, namely, natural disasters. In a very real sense, the top of the food chain is now the earth herself. But hopefully there may still be time to repent and change.

p. 128: The blessings of a healed land seem to follow when there is a remarriage with the people and the land. The current marital status between modern humanity and the land is similiar to a state of divorce. Today, the earth is clearly speaking to humanity, but in terms of our national and global policies we are ignoring her message. What is needed in order to reconcile the marriage is a marriage counselor. And that is the role that indigenous people can play in this serious breach.

I have been listening to sermons in churches for over thirty years, and I am hard pressed to count on one hand the messages that encouraged me see or value my connection with the environment. All too often questions regarding our stewardship of the land or relationship with the land-environment are met with the all too common, standard knee jerk response: "What's it matter anyway... its all going to burn." Shalom and the Community of Creation breathes fresh air into the stale conversation by casting vision of how human beings might relate to the creation in a healthy way. Dr Woodley skillfully points out the profound similarities between the Native American harmony way approach to life, with the Hebrew- Shalom way of life found in the Old Testament. This book gives the reader a holistic theological foundation that provides hope for those who feel trapped within our "its all going to burn" ideology. Shalom and the Community of Creation left me feeling both challenged and inspired to learn more from my Native American brothers and sisters of how I might walk on this earth in healthier way! This is a life giving book that is definitely worth reading!

A Story That You Won't Forget!

5 big stars goes to this book that is adventurous, touching, memorable, romantic, and a wee bit suspenseful - all at the same time! Told from several unique character's viewpoints, this story kept me turning the pages, wanting to learn more about Chioma's past and where her future was headed. Each chapter held a new piece to this special story of her hard, pain-filled life, and her journey toward salvation.

There were only two scenes that, depending on the age and maturity of the reader, might be considered unnecessary to the story or bothersome. After a couple are married, it has a scene the next morning where the reader is informed that they are not wearing clothes. And later on, a woman is accosted by three men while she is bathing herself and her infant son, though it never says if they saw her out of the water.

Besides these two mild parts, the book was amazing from beginning to end! I loved and enjoyed every moment. There were a few scenes that made me smile, while others made my heart ache for the characters suffering. A book like that is priceless! And to add to that, it also has a lot of history of how the times were while Nelson Mandela was in prison in the 1980s. I always enjoy learning new facts and information from history - and getting to learn it within a story is even better!!

If you've been looking for a book that won't quickly leave your thoughts or that will cause you to pick it up more than once to re-read those special scenes, then I highly recommend No Greater Love to be at the top of your list! ;-)

First in Extreme Devotion series sets bar high for next in series

No Greater Love by Kathi Macias is the first book in the Extreme Devotion series about Christians around the world facing the ultimate test of faith. In 1989 South Africa is still under apartheid. No one knows that better than Chioma. Now a servant on the Vorster farm, she watched her parents slaughtered by the white authorities for insurrection, then her brother murdered by friends of the Vorster's son Andrew. She's tried to fight her feelings for Andrew, but his knowing blue eyes force her to see him as more than just the color of his skin. Macias does a wonderful job portraying the complicated emotions of the Vorsters as they struggle with their faith, as well as with Chioma's wavering loyalty. She puts the reader in the middle of a story that can have no happy ending, but forces us to sympathize with Chioma's suffering as well as the Vorster's confusion. Macias makes the characters come to life and refuses to take the easy way out. It's a powerful novel that will force readers to think deeply about what true faith looks like.

I have found Ms. Leet's ability to gather the teaching only formerly reserved for men in the strictest sense of the traditions of Judaism past most profound. Her never ending ability to lead one along some of the most amazing threads of thought is unprecedented and more concise than any previous (save for her mentor: R. Aryeh Kaplan). I am not a Jew and I am not a convert to Judaism or for that matter one who considers myself to be connected to any modern day religious order or sect, however I have a love for the study of the Torah and insights of the ancient (and modern) sages of Hebrew literature and teachings. Ms. Leet is among the modern Sages. I hope to have all of the volumes of her set soon in my library, right next to R. Aryeh Kaplan and all the others I have been able to gather (which includes Daniel Matt's wonderful first three volumes of the Zohar...) Who knows, she may yet have more in her heart to pour forth. You better be up on Calculus and Physics for sure!!!

Masterful mysticism

In this, the first of three powerful books on Kabbalah, Leet takes the reader on a deep journey into the mysticism of Judaism. As one who is not Jewish, but deeply interested in the mystic foundations of all paths, I found this book to be a very solid foundation for both Kabbalah and even for Christianity. However, if you are firmly planted in the notion that things should not change, this isn't the book for you. Leet shares her iconoclastic vision of how Judaism can stay relevant into the next century and beyond. Excellent reading.

For Expert Eyes Only !

This is a book for Jews. I found a great deal of it incomprehensible, as the author assumes a knowledge in the reader that I doubt many non-Jews would have. Having said that, even though I did not understand much of the book, and gave up two thirds of the way through, I could see that this is a work of deep scholarship. Leonora Leet wrote this book, and the other three in the series, as a labour of love. The culmination of a lifetime's work. The quality of the writing is incredible and serious students of Judaism and Kabbalah are bound to gain from its perusal. I myself learned a great deal about Judaism from it, but the majority of it remained a mystery to me. For someone who is from a Jewish background I am sure that there will be many insights to be gained from this book. I think it is destined to become a classic.
